Chef L'Arcangelo Dandini serves some of the most refined cucina romana in town. His carbonara, amatriciana, and coda alla vaccinara are hard to beat. His recipes draw from historical sources, ranging from Roman antiquity, through the Renaissance to the cucina povera of the 19th and 20th centuries. Gnocchi alla matriciana (served Thursdays only) may be the best first course in all of Rome.
